Tiina's Journey
Tiina Fernandez Polvere has been baking since she was 12 years old, beginning around 1973.
She catered lunches and desserts to New York City’s Public Theater, all while starting her first
catering company, appropriately named,”Tiina’s Tea Time.” Tiina went on to attend several
cooking schools,... The Culinary Institute in Hyde Park, New York., Le Cordon Bleu, in Paris,
France, and Saucier, in New York City, as well as Parsons school of design in New York City.
In 1981 Tiina worked as a pastry chef and bread maker in many of
Nantucket's most famous restaurants. She then went on to make Nantucket her permanent
home and soon after, Tiina founded Nantucket Cake Company, crafting one of a kind,
custom-made cakes and desserts for her long time customers and restaurant chefs.
In 2010, Tiina moved her Nantucket Cake Company to downtown Nantucket’s Historic District
and named her new venture, “Petticoat Row Bakery” – connecting her new chapter to the
Nineteenth century history of the area when many of the businesses were either owned or run
by women.
One sleepless night in 2015, Tiina heard a 1970s song playing in her head at 3 AM and decided
to call her new cookie business that she was soon to launch ,...”Nantucket Bound Cookies.”
As the title states,”you’re either BOUND to visit Nantucket or you’re BOUND to return someday!”
Today, keeping true to her beginnings, Tiina still owns and operates her original Nantucket Cake
Company and Nantucket bound Cookies from her home kitchen on Hummock Pond Road, 30
miles off the coast of Massachusetts.
